According to the January 2013 issue of the INTA Bulletin, Costa Rica has secured its first appellation of origin protection. The object of this protections is the designation "Turrialba" for cheese. This landmark took some years to achieve, since the application process was apparently commenced as long ago as February 2008.
Turrialba is a soft white cheese which has been produced in its volcanic environment since at least 1870
